I’m obsessed with this Tahini Dressing. It’s creamy, lemony, and has a little kick of black pepper to it. I like to drizzle it over my salads, chicken, brown rice, Screenshot 2014-12-12 10.58.57quinoa, and roasted vegetables. If you make a small batch you can have it handy for the week to make any meal go from bland to bomb in a snap.

What is tahini you ask? It’s ground up sesame seeds. You can buy it all ground up nice for you in any health food store, and it has a consistency of peanut butter.

What’s so great about it? Well for starters it’s full of complete protein– 7g in just 2 tablespoons! It has lots of wonderful vitamins and minerals. Did you know sesame seeds can actually help strengthen your hair, skin, and nails? Sesame seeds not only have a high level of calcium, but also zinc, magnesium, manganese, and copper, necessary for the balance and absorption of this calcium. While I’m not a big fan of tahini on its own (some people do love it), in combination with other things it can be heavenly. For instance, try tahini with dates. Wow, just wow. TAHINI DRESSING

  • 1/2 cup tahini
  • 2 lemons, juiced
  • 3/4 to 1 cup of water
  • 1 large garlic clove, minced
  • 1/4 tablespoon sea salt
  • 1/4 tablespoon black pepper

Add your dressing ingredients to a jar with a lid. Shake vigorously, and allow the flavors to marinate while you prepare your salad, rice, chicken, veggies, or anything else you’d like to drizzle this over!
